Olfaction (the sense of smell) is mediated by receptor neurons located in the nose that have the tough job of translating chemical signals (odors) into electrical signals that the brain can understand. To make matters worse, in vertebrate animals, there are about 1000 different types of these neurons located within the nose, each highly tuned to sniff out particular molecules that might make up an odor. Somehow, very rapidly the olfactory system is able to process all the information and recognize complex mixtures of odors. Certainly, a great deal of olfactory processes such as odor recognition require high level processing by the brain.
